Loins of White Tuna (Thunnus alalunga), the most prized variety for its texture and flavour. Caught during the coastal fishing season, using traditional fishing gear. The loins are cleaned and placed in the jars by hand. Selected and prepared for Casalba by the best artisan canneries on the Basque coast.
